If you are looking for a healthy oil free tea time snack, this would be the right choice. Vattaayappam or steamed rice cake is exactly the thing to go for when you crave some light bites. They can be made in large round molds or plates like Pesaha appams or in idli molds as small discs. You can even store them up for couple of days in airtight containers.
Ingredients
2 cups of ponni rice soaked for 6 hours
1 cup ponni rice, cooked
1 coconut, grated
1/2 cup sugar
2 tsp yeastSalt as required
Preparations
Grind the soaked and cooked rice together
Add grated coconut to it and grind again Add salt and yeast to this batter and set aside 4-5 hours for fermentation
Add water to this batter until they reach the consistency of idli batter
Pour this batter into idli molds and steam cook for 8-9 minutes
Garnish with cashew nuts and raisins roasted in ghee and serve
