Try these crispy kappa pappadams - a crunchy addition to your Vishu sadya

Kappa pappadam or tapioca crispies is a delicious snack that can be cooked easily with very little oil. These spiced wafer-thin kappa papadam would make the perfect addition to your Vishu sadya. Here is how you could make the tapioca crispies.

Ingredients
2 tapiocas
2 tsp chilli powder
½ tsp turmeric powder
½ tsp asafoetida
1 tsp pepper powder
2 tsp salt
1 tsp cumin
2 tbsp sesame seeds

Preparation
Peel and wash the tapiocas and cut them into small pieces
Grind the tapioca pieces along with cumin in a mixer jar
The consistency should be that of dosa batter
Into the tapioca paste add chilli powder, turmeric powder, asafoetida, pepper powder and salt
Mix well
Boil 6 glasses water in a thick bottomed vessel
When the water boils rapidly add in the spiced tapioca batter
Stir continuously until the mixture thickens up
Now add the sesame seeds and mix well
On a plastic sheet, place a dollop of thick tapioca mix
Spread into wafer thin pappadam using the backside of a spoon
Keep it under the sun for at least two days
After two days, fry in hot oil
Enjoy the crispy kappa pappadam along with sadya.
