An instant breakfast appam with eggs and coconut milk


A wholesome breakfast snack with the the goodness of eggs and coconut milk. Follow the recipe.

1½ cups raw rice
5 tbsp sugar
1 egg
5 cardamom (powdered)
Coconut milk
Salt as required
Oil for frying

Soak rice for over three hours
Grind to a fine paste with thick coconut milk
Grind again with salt, cardamom, eggs and sugar to dosa consistency
Set aside for 30 minutes
Heat a pan and pour in a table spoon of the batter and lower the flame
When one side is fully cooked, flip over
The appam should not turn crispy

Thickness of coconut milk will depend upon the quality of the coconut. Extract milk from half a coconut. Adjust quantity of sugar as per requirement.
