Mutton stew- The best warm-up food ever

Mutton stew

Stews are the best warm-up food that you can have on a winter morning. A steaming bowl of meat stew beside your breakfast platter could just make your day. Mutton makes the chewiest of stews. Cooked in coconut milk, mutton stew is an absolutely delicious side dish that you can serve for Sunday breakfast with appam or rice.

Ingredients
1 kg mutton
2 tsp coriander powder
1/2 tsp turmeric powder
1 tsp fennel powder
3 star anise powdered
3 tbsp oil
1 inch piece of cinnamon
4 cloves
4 cardamom
1 tsp pepper powder
3 onions sliced
6 green chilies, slit
2 tsp ginger minced
Salt as required
2 cups of thick coconut milk
3 cups of thin coconut milk
2 tbsp ghee
1 tbsp shallots sliced
2 sprig curry leaves

Preparation
Clean the mutton and cut it into small pieces
Mix coriander powder, turmeric powder, fennel powder and star anise powder together
Heat oil in a pan and fry cinnamon, cloves, cardamom and pepper powder
Saute onions, green chilies and ginger in it
Add the spice mixture to it and mix well
Add mutton to this pan and fry a bit
Add salt and thin coconut milk to it and cook covered
Stir occasionally
When it is cooked well, add the thick coconut milk and heat it
Remove from the stove before boiling
Roast shallots and curry leaves in ghee and sprinkle it in the stew
Serve hot with palappam and rice
