This is a nutritious salad with a colorful mix of ingredients that spell healthy.
Ingredients
¼ red cabbage
½ cup baby corn
2 tbsp cashew nuts
2 tbsp sprouted green gram
2 spring onion stems
½ €“-1 whole cucumber (according to taste)
1 sprig of basil
For seasoning
Salt, as required
Pepper powder, as required
Juice of ½ lemon
½ tsp oregano
1 tbsp olive oil
Preparation
Chop the cabbage into small pieces and place in a bowl
Chop the cucumber, deseed, and add to the cabbage
Take the spring onion, chop into small pieces and add to the bowl
Toss the baby corn and then the sprouted green gram
Take a few basil leaves and add to the mixture
Now, to make the dressing, take the salt, pepper, oregano and lemon juice in a smaller bowl
Add the olive oil to the dressing as well
Pour the prepared dressing over the salad and mix well
Add fried cashew nuts to the salad and serve
