Easy-to-make healthy coconut kanji

Keralites will forever swear by the countless health properties of the kanji (rice gruel). It’s a reservoir of nutrients and easily digestible. But it has to be made the right way, with the right measure of water to rice, that is, four glasses of water to one glass of rice.

There are special varieties of the kanji which call for eight glasses of water instead of four. Here's one such delectable rice-coconut kanji combo prepared with a mix of double boiled rice (kuthari) and coconut. This is also the right choice for Karkidakam.

Ingredients
1 cup kuthari (red rice)
1/2 coconut (scraped)
Salt

Preparation
Put the red rice in the pressure cooker and add add enough water
Put the lid on and boil the rice
When it's boiled, add the scraped coconut and salt
Your delicious rice gruel is ready
