Samba broken wheat with shrimp salad

Samba broken wheat is a healthy and versatile ingredients and perfect to start your day on a healthy note. This salad recipe is by Abhilash Lazer George, the winner of Double Horse Onmanorama HomeChef 'Chef of the Month title.'

It's healthy, delicious, and most of all, easy-to-make for when you're on the go!

Ingredients
1/3 cup DoubleHorse samba broken wheat
1 cup loosely packed parsley leaves, chopped
1 cup chopped fresh mint (preferably spearmint)
1 cup broccoli (chopped)
200gm fresh shrimp
2 Persian cucumbers (unpeeled and finely chopped)
1 medium tomato (seeds removed and finely chopped)
1/4 cup fresh lemon juice
1/3 cup extra-virgin olive oil

Preparation

Salt and freshly ground pepper

Soak the broken wheat in warm water till soft

Saute the shrimps in olive oil and salt and keep aside

In a mixing bowl, add the soaked wheat and all chopped veggies and cooked shrimp

Add salt and pepper and mix well

Dress it all with lemon juice and olive oil and serve
