Pista coconut peda

Try out this delicious melt-in-the-mouth green pedas that has an irresistible coconutty flavor. Roll them into desired shapes and adorn your Diwali platter with these colorful treats. These pedas can be kept for few days at room temperature and can be refrigerated for up to a month.

Ingredients
1 cup desiccated coconut
1 tbsp ghee or butter
3 tbsp pistachios
½ cup sweetened condensed milk
1 tsp cardamom powderFew drops of green food color

Preparation
In a pan, roast the desiccated coconut and pistachios separately, for not more than a minute
Make sure it doesn€™t change color
Switch off and keep aside
Once cooled, crush pistachios in mortar and pestleIn the same pan, melt the ghee

Pour condensed milk and cook for a minute on medium low flame
Add desiccated coconut, pistachios and cardamom powder to it
Keep mixing in low-medium flame and stir for few secondsCheck the consistency of the mixture

It should be gluey
Pedas will become hard and chewy if you cook for more timeAdd food color, mix well

Switch off the flame immediately and transfer the mixture to a greased plateWhen the mixture becomes mildly warm, apply some ghee on your palms to shape the peda
Let it set for 30 minutesStore coconut pista peda in an air tight container and serve as needed, enjoy!
