Jackfruit special side dish and spicy chips

Except the thorny skin, every part of jackfruit is edible. Check out the recipes of special thoran or stir fry in which the chakini or the flimsy white strips, seeds and the rind are used and the tasty crispy and spicy chips too.

Jackfruit thoran
Ingredients

4 cups chakini or flimsy white strips (finely chopped)
1 cup jackfruit seeds (chopped)
¼ cup jackfruit rind (finely chopped)
Salt as required
1 tsp turmeric powder
2 cups grated coconut
1 tsp chili powder
4 garlic cloves
¼ tsp cumin seeds
2 sprigs curry leaves
2 dried chillies
¼ tsp mustard seeds
¼ tsp urad dal
2 tsp oil

Preparation
Cook the white strips, seeds and rind by adding salt, turmeric powder and water as required
Meanwhile, crush the grated coconut along with garlic, cumin seeds, chilli powder and a sprig of curry leaves
Add this mixture into the cooked jackfruit mix
Mix well
Heat oil in a pan
Splutter the mustard seeds and urad dal
Add a sprig of curry leaves and dried chilies
Roast well
Add this tempering into the jackfruit mixture
Tasty jackfruit stir fry is ready.
Jackfruit - pepper chips
Ingredients
4 cups raw jackfruit bulbs (cut into thin strips)
Salt solution as required
¼ tsp pepper powder
Oil to fry

Preparation
Mix the jackfruit strips with the salt solution
Fry these in hot oil until they turn crispy
Sprinkle the pepper powder
Spread the spicy jackfruit chips on a sheet of paper to remove excess oil
Store in dry and air tight containers after the chips have cooled down.
