Methi thoran: A low fat, healthy side dish with your meals

Uluvaila aka methi, the humble fenugreek leaves, are packed with vitamins, and minerals, and bring with them a plethora of health benefits that seamlessly merge with the vibrant flavours of Malayali dishes. The high fiber content in methi creates a sense of fullness. This feeling of being satisfied after a meal helps in controlling overall calorie intake and aids in weight loss. Methi becomes a low-calorie option as a cup of fenugreek leaves contains just 13 calories.

If taken in the right way, methi can also help control the blood sugar level. It also contains saponin compounds that help in controlling the blood sugar levels. Hence, diabetes patients should incorporate fenugreek into their diet. Here's how to prepare a perfect methi thoran:

Ingredients
250 grams of fresh methi leaves, washed and finely chopped
2 tbsp oil
¼ tsp mustard seeds
6 pods of garlic
1 big onion
2 shallots
2 green chillies
1 sprig of curry leaves
¼ tsp turmeric powder
¼ tsp chilli powder
½ cup grated coconut
Salt (as required)

Preparation
Place the fenugreek leaves in a vessel after removing the stems and roots
Fill it with enough water to submerge the leaves completely
Swish the leaves around in the water to remove any dirt or impurities
Drain the water and chop the leaves into tiny pieces
Similarly, dice onion, shallots, green chilli, garlic, and curry leaves in another vessel
Heat coconut oil in a pan and add mustard seeds
Once they start to splutter, add garlic and curry leaves
Add chopped onions and shallots and saute the mix
Add grated coconut too and continue sauteing for another two minutes
Now add turmeric powder and chilli powder to the mix
Add the fenugreek leaves into this and cook for 10 minutes after closing the vessel with a lid
Now open the lid and stir it again
The tasty and healthy methi thoran is ready
Serve it hot with steamed rice or whole-grain bread
