Chembappam without colocasia

These little treats are made with rice flour, coconut milk and eggs. It is a delicious snack that can be easily made at home. This dish is called chembappam as it looks like the stem of colocasia.

Ingredients
1 cup roasted rice flour
1 cup thick coconut milk (made by adding ¾ cup of water in a cup of grated coconut and squeezed)
3 tbsp sugar
1 egg
2 cardamom pods
Two pinches salt
Oil to fry

Preparation
Powder the sugar and cardamom together
Add egg into it and beat well
Into it add the rice flour, salt and coconut milk (save 2 tablespoons for later)
Mix well with your hands
The batter shouldn€™t be too thick or runny
Heat oil in a pan
Scoop small amounts of batter and drop it in the hot oil
Fry until the chembappam turns golden brown
Cow's milk could be used instead of coconut milk.
