Onam-special avial with a secret ingredient

The avial that is served for sadya is quite special as it is rich, delicious, and full of nutrients. Here is how you can make avial easily at home.

Ingredients
½ cup carrot
¼ cup beans
½ cup raw plantains
1 cup snake gourd
10 drum stick pieces
1 cup cucumber
1 cup elephant yam
½ cup ash gourd
2 green chillies
10 cashews
5 tbsp coconut oil
½ tsp cumin 
¼ cup water
1½ tsp turmeric powder
¼ tsp chilli powder
½ cup grated coconut
¼ cup scraped coconut after milk has been extracted from it (secret ingredient)
Curry leaves as required
4 shallots
4 tbsp curd
Salt as required
Plantain leaves

Preparation
Wash the vegetables and cut into thin slices
Heat 2 tbsp coconut oil in a thick bottomed vessel
Roast some curry leaves
Add the elephant yam pieces along with ½ tsp turmeric powder and 1 tsp salt
Sauté for 2 minutes
Add the rest of the vegetables barring the drum sticks and raw plantains
Add ½ tsp turmeric powder, ¼ tsp cumin, 1 split green chili, ¼ tsp chili powder, some cashews and salt as well
Mix well
Cook on low flame with the lid on for 5 minutes
When the vegetables are half cooked, add the drum sticks and the raw plantains
Mix well and cook
Add the grated coconut, 1 green chilli, cumin, shallots and shredded coconut as well into a mixer jar
Crush them
Add this mix into the almost done vegetable mixture
Cook well
Sprinkle some turmeric powder, fresh coconut oil and curry leaves on top of the avial
Cover the vessel using the plantain leaves.
