Upma is one of the easiest dishes to cook on a busy morning. From semolina, broken wheat, and flattened rice to vermicelli, millets, and oats, upma could be cooked using a variety of ingredients. Here is how to make melt-in-the-mouth Udupi special semolina upma. If you like it, you can also top it with some coconut shavings to make it a lot more delicious. 

Ingredients
1 cup semolina
3 tbsp oil
1 tbsp ghee
1 tsp mustard seeds
1 tsp urad dal
1 tsp yellow split dal
3 dried chilies
1 sprig of curry leaves
¼ cup cashews
1 small onion
1-inch piece of ginger
3 green chilies
1 small carrot
4 beans
3 cups water
1 tsp sugar
Salt as required
¼ cup grated coconut
Juice of half lemon
¼ cup chopped coriander leaves

Preparation
Dry toast the semolina for five minutes on low flame
Heat coconut oil in a thick-bottomed pan
Splutter mustard seeds, urad dal, dried chilies, curry leaves, and yellow split gram
Fry cashews until they are light brown in colour
Now sauté finely chopped onion, ginger, and green chilies
Add carrots and beans
Sauté and cook well
Into it add 3 cups water, sugar, and salt
Add grated coconut when the water boils rapidly
Add the toasted semolina
Keep stirring so that lumps wouldn’t be formed
Cover the lid and cook for five minutes on low flame
Add lemon juice and chopped coriander leaves
Finally, add a tablespoon of ghee too
Delicious and soft Udupi upma is ready.
