Sweet and spicy 'inji mittai' (ginger candy)

'Inji mittayi' or ginger candy creates a riot of flavours inside your mouth, as you enjoy its charming nostalgic feel. Sweet and spicy flavours perfectly balance each other. Here's how you can make ginger candy easily at home.

Ingredients
300 gm ginger (finely sliced)
400 gm sugar
600 ml water
4 tsp powdered sugar

Preparation
Cook the finely sliced ginger in 300 ml water
Allow it to cook for at least 20-25 minutes
Drain the water and add sugar to the cooked ginger and mix well
Add 1 cup water and boil again for another 20-25 minutes
When the water has boiled well and begins to get reduced, scoop out the ginger pieces
Allow the ginger pieces to cool down before sprinkling powdered sugar on top of it
Store the ginger candy in air tight containers.
