Colocasia in coconut milk

Rich source of carbohydrates and starch, locally grown colocasia is delicious and healthy as well. Here is a simple recipe of colocasia curry aka chembu paal curry that is cooked in thick coconut milk. This curry tastes great with rice or chapathi.

Ingredients
1 cup colocasia
2 cups coconut milk
1 tbsp ginger
4 green chillies
2 onions
1 carrot
½ tsp garam masala
Coconut oil as required
Some curry leaves
Salt as required

Preparation
Peel and wash the colocasia throughly
Cook the colocasia pieces
Heat oil in a pan and sauté ginger, green chillies, onions, carrot and garam masala
Pour in the coconut milk
Add salt as required
Now, add the cooked colocasia pieces
Take it off the flame when the gravy thickens up
Sprinkle a spoon of coconut oil on top
Garnish with fresh curry leaves.
