Save this ulli thoran up to three days

The delicious thoran or stir fry made with shallots can be saved up to 3 days without even popping it in the fridge. It is incredibly easy to prepare this dish and is ideal for those who have to rush to the office in the morning. Check out the simple recipe of shallots stir fry.

Ingredients
500 gms shallots
1 cup grated coconut
1 tbsp chilli powder
½ tbsp coriander powder
1 tbsp black pepper powder
½ tsp turmeric powder
Curry leaves as required
Salt as required
3 tbsp coconut oil
2 tbsp coconut shards
1 tsp mustard seeds
3 dried chillies

Preparation
Peel the shallots and finely chop it.
Heat coconut oil in a pan and splutter mustard seeds.
Into it add dried chillies and chopped shallots and sauté.
When the shallots turn soft and translucent, add the coconut shards. Stir well.
Now add the grated coconut, chilli powder, coriander powder, pepper powder, turmeric powder and curry leaves.
Close the lid and allow the mixture to cook for at least two minutes.
Now mix everything together and add salt as well.
Stir the thoran frequently so that the shallots wouldn't stick onto the bottom of the pan.
Allow the shallots to get roasted nicely before turning off the flame.

Notes
To peel the shallots quite easily, soak it in hot water for two minutes. The soaked shallots could be effortlessly peeled using a knife.
