This is a delicious soup that is packed with vitamins and essential nutrients that can help boost immunity. The oats chicken soup can be loaded with vegetables of your choice. Ingredients

¾ cup oats
¾ cup chicken pieces
1 onion (chopped)
½ cup carrot (finely chopped)
½ cup beans (finely chopped)
Salt as required
Pepper powder as required
¾-1 cup milk
2 cups water
1 bunch spring onion (finely chopped)
1½ tbsp butter
¾ cup chicken stock

Preparation

Cook the oats; keep it aside to be used later
Melt butter in a pan
Sauté onions, carrot, beans and spring onion
Add salt and pepper as required
Now add the shredded chicken as well
Mix well
Pour in the chicken stock
Add the cooked oats
Into it add the milk
Give it a mix
Add some more milk if the soup is too thick
Taste for seasoning
Enjoy the soup hot.

Notes

To prepare the stock at home, cook the chicken carcass, liver, and the neck with some carrot pieces in 4 cups water. Add an onion (cut into small pieces) and chopped celery as well. When the broth has boiled nicely, pass it through a sieve for clear chicken stock.
