Now add the ginger and garlic
Sauté until the raw smell is gone

Add more coconut oil if required
Add fresh curry leaves for aroma and flavour
Add the tamarind bulbs
Keep stirring
Add some grated coconut
Mix well
Add the cleaned shrimp
Give everything a good mix
Add the remaining coconut too
Now pour water; however, do not add water until it covers all the ingredients

Close the lid and cook
When steam begins to escape, pour some fresh coconut oil
Add curry leaves too
The perfectly cooked shrimp and the flavoursome gravy pair well with rice or chapathi.
