Give a yummy makeover to your Vishu sadya payasam by giving it a jackfruit twist. Ditch palada and go for sliced jackfruit arils to make the jaggery payasam and surprise your guests.
Ingredients
Sliced jackfruit arils
Water
Ghee
Jaggery syrup
Thin coconut milk
Thick coconut milk
Soaked sago pearls
Powdered dry ginger,cardamom and cumin seeds
Raisins and cashew nuts
Preparation
Boil half litre of water
Add sliced jackfruit arils to the boiling water
Once the jackfruit is cooked, pour 1 tsp ghee and mix well
Add jaggery syrup and stir well
Add thin coconut milk to the mixture followed by soaked sago pearls
Stir thoroughly
Add the powdered spices (dry ginger cardamom and cumin seeds) to thick coconut milk
Add this mixture to the pradhaman
Turn of the flame before it boils
Heat ghee in a pan
Saute raisins and cashew nuts
Add the fried raisins and cashew nuts to the pradhaman
Garnish with nuts and dry fruits before serving
