'When it rains, snack well' is our motto! And clearly the homemade ethakka appam endorses the idea. Crispy fried bananas with piping hot tea is how we recommend it.

Ingredients
2 ripe bananas
1 cup maida
½ cup rice flour
2 tbsp sugar
A pinch of salt
A pinch of baking soda
A pinch of cumin seeds

Oil, to deep fry

Preparation
Cut the edges off the banana, peel and then cut into half
Now take each half and run the knife through it length-wise, cutting into three long pieces
Pass the maida into a bowl
Add rice flour, sugar and a pinch of salt
Gradually add the water and make a semi-loose batter
Once all the ingredients have combined to make a smooth paste, add a pinch of baking soda
Also add the cumin seeds
Pour enough oil into a pan
Once the oil is hot, dip the banana pieces into the batter and deep fry them

Simple and delicious homemade ethakka appam is ready to be relished
