Tapioca bonda

It's nothing like you imagine; see those unassuming balls there? Those are mashed tapioca balls hide a spicy stuffing inside, one bite of which will land you in seventh heaven!

Ingredients
2 long pieces of tapioca
2 tbsp oil
1 cup onion, sliced thin
1 tbsp chopped green chillies
1 tbsp minced ginger
1 tsp salt
1 egg
Bread powder, as required
Oil, to deep fry


To powder together


10 red chillies, fried
3 shallots
a small piece of pot tamarind (kudampuli)
Salt, as required

Preparation
Cook the tapioca in water and mash them to a smooth paste. Keep aside
In a pan, fry the red chillies and keep aside
Now, heat a pan and pour 2 tbsp oil
Toss in the onion and saute lightly. Don't let it brown
Add the green chillies and ginger to the pan and saute for a minute
Now add salt and mix well
Pass this mixture into the bowl of mashed tapioca and blend well
Now, in a mixer, blend together the fried red chillies, shallots, pot tamarind and salt. Do not use water
Once the filling is ready, start preparing the tapioca balls
Make a ball of the tapioca paste, fill some of the red chilli paste inside and seal it shut
Repeat with all the tapioca balls
Break the egg in a bowl and beat well
Dip the ball in beaten egg, roll over the bread crumbs and deep fry in oil
Crispy golden tapioca balls are ready to be savored
