Healthy spinach dal curry

Spinach and dal curry is loaded with vitamins and other essential nutrients. Check out the pretty simple recipe of spinach dal curry.

Ingredients
4 cup spinach (chopped)
½ cup dal
½ cup grated coconut
3 cloves garlic
5 shallots
1 green chilli
¼ tsp cumin seeds
¼ tsp turmeric powder
Salt as required
3 cups water
1 tbsp coconut oil
¼ tsp mustard seeds
2 dried chillies1 sprig curry leaves

Preparation
Wash and soak the dal for some time
Pressure cook the dal until 4 whistles
Meanwhile, wash and chop the spinach
After 4 whistles, add the spinach into the cooked dal
Add two glasses of water and cook for 5 minutes
Grind the grated coconut with garlic, shallots, green chillies, cumin and turmeric powder in a mixer jar
Add the coconut paste into the spinach - dal mix
Add salt as required
Mix well and boil for sometime
Heat coconut oil in a pan and splutter mustard seeds
Sauté shallots, dried chillies and curry leaves
Add this tempering into the curry
Mix wellKeep aside with the lid on for some time before serving the delicious curry.
