The freshness of the meat you buy is as important as the cooking part to ensure taste and health of a dish. Here are a few tips to keep in mind when you buy poultry meat.

- While buying live birds, go in for the one which weighs well and looks healthy.

- See that the bird's breast is well formed and fleshy

- There should be no cuts or wounds on the flesh. The chicken changes colour if the blood is not fully drained out. It’s not advisable to cook such meat.

Chicken breasts

- Rub in salt and keep the chicken for a while to make it soft.

- Once broiler chicken is brought home, take it out of the polythene bag and keep it wrapped in a piece cloth dipped in vinegar.

- To ensure that the chicken pieces smell good, clean it with salt and vinegar.
