It is easy to make pure ghee, butter and fresh cream from malai or milk cream at home. Check out the recipes.
1 ¼ litre milk
To make the milk cream, boil the milk first
Add some water as well
Boil for 5 minutes on low flame
Allow the boiled milk to cool down completely
After the milk has reached room temperature, keep it overnight in the fridge
You could scoop rich and creamy milk cream the next morning
Repeat this until you make enough milk cream.
Allow the chilled milk cream to reach room temperature
Now blend it well in a mixer jar.
First, pour some cold water into the mixer jar
Into it add the milk cream
You will see that butter comes on top
Scoop out the butter and transfer it into a flat bottomed plastic/ steel container with water in it
Mix well using a spoon until the butter is clean
Transfer the butter again into another container with water
Repeat a few times until you get firm, fresh butter
Store this butter in fridge.
Make butter using the above method
Melt this butter in a non stick pan
Keep the flame on simmer and stir until the milk begins to separated
Keep stirring until the mixture becomes ghee
Turn off the flame and allow the ghee to cool down
Make sure that water droplets wouldn't fall into the ghee from the lid
Strain the cooled ghee and store in jars.
