A superb dish for your lunch, this raita has marinated and fried brinjals layered underneath beaten flavored curd. Refreshing is the word.
Ingredients
2 large brinjals
1 cup thick beaten curd
1 tbsp sugar
½ tsp salt
To mix together
½ tsp chilli
¼ tsp turmeric powder
¼ tsp salt
For seasoning
1 tsp cumin seeds
1 tsp chopped garlic
½ tsp chilli powder
Preparation
Add sugar and salt to the beaten curd
Mix well and keep in the refrigerator
Slice the brinjal in circles
Smear the pieces with salt, chilli powder and turmeric powder
Heat a pan and pour ¼ cup oil
Drop the brinjal pieces in the oil and deep fry them
Now, in a flat bowl, layer the fried brinjal pieces
Spread the set curd over them
Now, for the seasoning, heat a pan and pour a little oil
Add cumin seeds
Drop the chopped garlic and saute until lightly brown
Add chilli powder and take off the flame
Serve immediately
