Mutton jug-broth

Ever thought of making soup in a jug? Try this interesting recipe to make clear mutton soup.

Ingredients
½ kg mutton, minced or chopped fine with the bones
¼ kg liver
¼ cup button onion, sliced
1 tsp ginger, sliced long and thin
9 garlic flakes
2 one inch cinnamon sticks
6 cloves
1 cardamom pod
1 tsp crushed pepper
Salt as required
1 orange-sized ball of maida dough

Preparation
In a jar, put in the mutton, liver, onions, garlic, ginger, cardamom, cloves, cinnamon, salt and pepper powder
Pour enough water and close the jar
Roll the maida dough with your hands to form a long strip
Paste it around the lid of the jar, sealing it tight
Place the jar in boiling water in a steam-cooker and cook it for 1 hour
Remove the cooked dough from the mouth of the jar and strain the soup
Heat the soup a little while, and have it hot

Notes
There are regular ferries carting passengers and vehicles from the boat jetty near the High Court in Ernakulam town to Customs Jetty (Fort Kochi). You could also board a bus from MG Road to go to Fort Koch
