The pork Vindaloo, popular in Goan, Coorgi as well as in Kerala Christian cooking, is a lusciously spicy dish.

Ingredients
1kg pork
1 tsp mustard seeds
1 tsp cumin seeds
¾ tsp fenugreek seeds
3 tsp red chilli powder
1 tsp pepper powder
½kg onion, fried in oil
4 tsp ginger-garlic paste
250gm chopped tomato
1 tbsp vinegar
1 tsp sugar
10-12 garlic pods
Salt, as required
Oil, as required

Preparation
Heat oil. Add ginger-garlic pastre
Grind together mustard seeds, cumin seeds, fenugreek seeds, chilli powder and pepper powder
Add this to the oil
Put in the chopped tomatoes, and follow it up with salt and vinegar
Now add the pork pieces and cook
Preferably, cook in the water over the lid method where water isn't directly added to the pork
Once cooked well, add the fried onion slices and garlic pods along with sugar
Pork Vindaloo is ready to be served
