Vegetable kurma

A lush, rich and creamy vegetable kurma that will give you nothing less than a sophisticated gourmet experience.

Ingredients
4 cups mixed vegetables (carrot, beans, cauliflower, green peas, potato, cashew nuts)
2 star anise
3 cinnamon sticks
6 cardamom pods
6 cloves
1 tsp whole black pepper
½ tsp fennel seeds
½ tsp cumin seeds
½ tsp turmeric powder
1 tsp chilli powder
2 tsp coriander powder
1 cup milk
¾ cup tomato puree
2 tbsp ginger-garlic paste
¼ cup cashew nut paste
1 tbsp curd
1 cup fried onion
¼ cup ghee
1 large bunch of coriander leaves
Water or vegetable stock, as required

Preparation
Heat ghee in a pan
Add cumin seeds, star anise, cinnamon, cardamom, cloves, whole black pepper and fennel seeds
Put in the ginger-garlic paste
Add turmeric powder, chilli powder and coriander powder
Mix in the tomato puree and blend well
Now, add the curd and mix well
Let the veggies cook under the lid
Add the fried onion to the gravy
Add cashew nut paste and then the milk
Stir well and take off the flame when it starts to boil
Garnish with generous quantity of coriander leaves
Delicious and rich vegetable kurma is ready to be relished
