Christmas pudding in cooker


Give your guests a break from cakes with this unique Christmas pudding. With dates and caramelised sugar, this dessert is packed with flavours to add to the festive season.

250 gms dry breadcrumbs
1 cup hot milk
250 gms powdered sugar
4 eggs
250 gms butter
½ cup brandy
A pinch of nutmeg
Caramelised sugar syrup (1 cup sugar and 1 cup hot water)
500 gms dried fruits (Raisins, dates, currants, fresh orange peel)

Soak the breadcrumbs in warm milk till soft
Beat egg yolks and add the sugar
To it add the soaked breadcrumbs
Then add the butter gradually
Pour in and mix the caramelised sugar
Finally fold in the dry fruits and the brandy
Beat egg whites and fold in
Pour into a greased mould and cover
Steam in a pressure cooker without the weight
Serve hot with custard.
