Pineapple curry

A traditional feast in Kerala or let's say, in the south of India, demands a sweet curry to get all the flavours into the spread. And this pineapple curry, with minimum effort and effortless execution not only brings into play the unavoidable 'sweet' in the feast, but also throws in some vivid colours!

Ingredients
1 medium-sized pineapple
100gm grapes
1 medium-sized carrot
1 cup scraped coconut
4-5 shallots
1 green chilli
2-3 garlic pods
¼ tsp turmeric powder
Salt, as required


For seasoning


1 dsp coconut oil
1 tsp mustard seeds
½ tsp fenugreek seeds
2-3 dry red chillies
A sprig of curry leaves

Preparation
Roughly grind together scraped coconut, shallots, green chilli, garlic pods and turmeric powder
In a pan, drop the carrots first, and then the pineapple
Add some water and put a lid on the mixture, allowing it to cook
Within a few minutes, open and add the coconut mixture, along with salt
Add the grapes and mix well
Make a seasoning of the ingredients listed and pour over the mixture
Delicious pineapple curry is ready to be savoured
