Sannas

A coastal Mangalorean steamed delicacy, sannas is a much-preferred breakfast goodie. Much like the south Indian idli, the sannas comes clean of spices and oils and makes for a great start to the day.

Ingredients
1 cup white rice
1 tbsp black gram/urad dal
1 tbsp sugar
A pinch of salt
¼ tbsp yeast

Preparation
Soak white rice and black gram overnight
Add the rest of the ingredients and grind to a smooth paste
Leave for 2 hours to ferment
Get the traditional steamer and some steel cups (moulds)
Smear a little oil in the moulds
The fermented dough has to be scooped out without bursting the air bubbles and passed into the moulds
Steam the moulds inside the vessel
Delicious and healthy sannas is readied within 5-6 minutes
