Kuzhi paniyaram

An immensely popular snack item in Tamil Nadu, the kuzhi paniyaram is an unfussy fried goody, made easily with rice batter and a coconut mix.

Ingredients
1 cup white rice
¾ cup parboiled rice
¾ cup black gram
5 dsp grated coconut
4 dsp oil
1 tsp mustard seeds
2 dsp chopped cashew nuts
1 dsp green chillies, chopped

1 sprig curry leaves
2 tsp ginger, minced
5 dsp shallots, sliced
Salt, as required


You also need the _unniyappam_ maker

Preparation
In a mixer, put white rice, parboiled rice, black gram and grind them together with a little water
Let it stand for 6 hours
After that, in a pan, pour oil
Drop the mustard seeds when the oil is hot
Add sliced shallots
Throw in chopped green chillies
Add minced ginger and a sprig of curry leaves
Add grated coconut to this
>Put in chopped cashew nuts as well
Now, drop this mix into the dosa dough that must have risen in 6 hours
Add enough salt and blend well
Now, get the _unniyappam_ maker ready
Light the stove and set the vessel on it
Pour oil into each hole until it fills half of it
Carefully pour the prepared mix into each hole, one after the other
Flip when one side turns brown and let it cook on both sides
Take the paniyarams off the pan when both sides are cooked. The outside should be brown and crunchy and inside soft and savoury
Relish them with hot tomato chutney
