Stuffed bell peppers with minced beef and cheese

Bell peppers come in several colours and are high in nutrient content. The rich vitamin content in the capsicum is good for the heart and eases menopause-related discomfort. A rich source of Vitamin C, they will help to enhance immunity and fight infections during the rainy season.

Ingredients
6 bell peppers
Oil as required
200 gm minced beef
1 cup chopped white onions
1 tbsp finely chopped garlic
2 tbsp Taco seasoning
1 tsp powdered cumin
Salt as required
Pepper as required
1 cup cooked white rice
1 cup American corn
1 cup cooked kidney beans
1 cup finely chopped tomato
1 tsp chilli flakes
1 cup fresh tomato puree
Mozzarella cheese as required
Cheddar cheese as required

Preparation
Cut the top of the bell peppers and clean the insides
Arrange them in a baking dish, fill it with the required quantity of water, cover and bake for 10 minutes at 180 degrees
Heat oil in a pan
Add the minced beef and saute well
Add chopped white onion and garlic, saute again
When the meat is cooked, add the flavouring masalas including Taco seasoning, cumin powder, salt and pepper powder, mix well
Into this mix add white rice, American corn, cooked kidney beans, tomato and chilli flakes, mix well
Stuff the capsicum with this mixture
Pour fresh tomato puree into a baking dish and arrange the stuffed bell peppers over it
Sprinkle mozzarella and cheddar on top of each bell peppers and bake for 15 minutes at 200 degrees Celsius
