Carpaccio di Manzo, rocket, shaved Parmesan

Raw meat sliced thin with a marinade of lemon, olive oil, salt, pepper and Parmesan cheese. It can be topped with rocket or fresh gentle salad.

70g tenderloin
10g rocket leaf
10g shaved Parmesan
20gm lemon wedges
10g extra virgin olive oil
0.5gm sea salt
0.2gm black pepper

Remove the fat properly from the tenderloin, wrap it with clean film and put it in the freezer for one to two hours.
Slice very thin and dress the meat with oil
Season with salt and black pepper
Season the rocket with salt, pepper and olive oil
Cut the lemon in wedges and shave the Parmesan cheese
Dress the meat with rocket leaf, lemon wedges and Parmesan cheese
