Italian cuisine boasts of crunchy salads with healthy oils and that extra bite of cheese, and this one is no exception!
30gm roman lettuce
30gm red radicchio
20gm rocket leaf
20gm iceberg lettuce
10gm black olive
3gm extra virgin olive oil
25gm goat cheese
4tbsp orange juice
Wash the leaves properly and cut each kind in half.
Blend orange juice, shallots and gradually add olive oil, salt and pepper
Mix the salad with orange dressing
Slice the pear and toss it with the orange dressing
Top it with radish, olives and crumbled goat cheese
