How about some eggplant in pasta? For a try, rub some salt and pepper into finely diced eggplant, bake it and mix it in with your pasta.

Here's how to go about it:

Ingredients
1 eggplant
Salt
Pepper powder
2 tablespoon olive oil
1 cup white onion
1 cup mushroom chopped
White wine (as required)
2 cups white and yellow zucchini
1 cup tomato (boiled and peeled)
2 cup tomato puree
200 gm penne pasta
2 tablespoon Mozzarella cheese
1 tablespoon basil leaf
Parmesan cheese for decoration

Preparation
Chop a reasonably large eggplant into small pieces and place them in an oven tray
Add salt and pepper as required
Drizzle some oil over it and bake this for 15 minutes at 180° C
Pour two tablespoons of olive oil into a pan and sauté a cup of white onion
Add a cup of chopped mushroom, some white wine, zucchini, boiled tomato, black olive, tomato puree and sauté well
Add the baked eggplant, a bit of salt and some pepper and mix well
Now mix in the 200 gm of penne pasta, two tablespoons Mozzarella cheese, and basil leaves
Decorate the dish with Parmesan cheese.
