Koorka-kizhangu ularthu

Stir-fried Chinese potatoes, or what we fondly call as koorka mezhukkupuratti, a much-loved recipe in Kerala assorted with potatoes make it a perfect dish for lunch to serve with rice. The fried koorka and potato slices with fresh garlic and shallots will give the dish a strong and bold flavor. If you are enamored of potatoes, you'll love this combination.

Ingredients
250 gm koorka or Chinese potatoes, cleaned and sliced
250 gm potatoes sliced
1/2 cup shallots
1 pod of garlic
10 dry chilies, seeds removed
2 tbsp oil
1/2 tsp turmeric powder
1 sprig curry leaves
Salt as required

Preparation
Boil Chinese potatoes in a saucepan or pot
Add salt and turmeric powder
When it is partially cooked, add sliced potatoes
When they are cooked, drain off the water
Crush shallots, garlic and dry chilies together
heat oil in a frying pan
Add the crushed mixture and curry leaves to the pan, stir well
Now add the cooked koorka and potatoes to it
Keep on stirring until it is fried well
Serve with rice
