Capsicum or bell peppers are a common vegetable in vegetable fried rice or pulao. Here’s aromatic capsicum rice made with bell peppers, spices and rice. This recipe goes well with kids as well as adults.
2 tbsp butter
1 tbsp crushed garlic
1 onion (finely chopped)
1 tbsp celery (finely chopped)
1 tbsp each of green, red and yellow bell peppers
½ cup boiled basmati rice
Heat butter and sauté garlic
After that, sauté the onions
Into it add the bell peppers and salt as required
Lightly sauté these; the bell peppers shouldn’t be overcooked
Now add the boiled basmati rice
You could also make it by sautéing the onions first
Mix rice and 1 cup chicken stock
Garnish with the rest of the ingredients.
