How about some tasty 'chukku kappi' cookies?

Chukku kappi is a unique concoction made using dried ginger, peppercorns, Holy basil, panikoorka (plectranthus amboinicus), jaggery and coffee powder. This herbal drink is often enjoyed as a medicine for fever, common cold and cough. It is an excellent immunity booster too. Check out the pretty simple recipe of tasty and crunchy chukkukapi cookies.

Ingredients
3-4 panikoorka leaves
A palm full of Holy basil leaves
2 tbsp peppercorns
1 piece dried ginger
1 cup water
200 gms jaggery
5 gms coffee powder
300 gms wheat powder
50 gms ghee
¼ tsp salt

Preparation
Crush the peppercorns and dried ginger
Take water in a pan
Add the panikoorka leaves, Holy basil leaves, jaggery and crushed dried ginger and peppercorns
Boil this mixture on medium flame
When the jaggery begins to melt, lower the flame and simmer for 5 minutes
Turn off the flame before adding the coffee powder
Mix well
Allow the concoction to cool down a bit
Mix ghee, wheat flour and salt in a bowl
Into it add the strained herbal coffee concoction
Mix well into a soft dough
Scoop a tablespoon of dough
Make balls and then press lightly between your palms
Place them on a baking tray lined with butter paper
Preheat the oven at 160 degree Celsius
Bake the cookies for at least 20-25 minutes
Allow the cookies to rest in the baking tray for 10 minutes
Enjoy the chukkukapi cookies with hot tea.
