Pack this carrot rice for lunch to school and office

Packing different dishes everyday to school or office is not an easy task. But, who won't be happy if they find their favourite dishes or even variety items in their lunch box, every day? Check out this really easy recipe of a delicious and nutritious carrot rice, and add it to your list of healthy lunch options. 

Ingredients
1 carrot
1 piece ginger
2 green chillies
1 cup yoghurt
2 sprigs curry leaves
1 tsp urad dal
1 tsp mustard seeds
2 tsp coconut oil
Salt as required

Preparation
Boil the rice and keep aside
Heat coconut oil in a pan
Splutter mustard seeds and urad dal
Sauté green chillies, curry leaves and ginger
Add this tempering into the rice
Add the yoghurt too
Mix well
Cook the grated carrot in steam or sauté lightly by adding some salt
Add the cooked carrots
Give everything a good mix
Tasty carrot – yoghurt rice is ready.
