These crunchy, creamy cashew nuts are nutrient-rich and you can also make them part of your Onam menu. You might finish your first batch in no time but don't worry, preparing this snack is easy! Here's the recipe. 

Ingredients
2 cups cashews
1 cup sugar
¼ cup water
A drop of yellow food colour
¼ tsp milk
¼ tsp butter
¼ tsp lemon juice
A pinch of salt
½ tsp vanilla essence
½ tbsp white/black sesame seeds (roasted; optional)

Preparation
Roast the cashews until they turn brown in colour, in an oven
Melt the sugar by boiling it in water
Mix yellow food colour in milk and add it into the sugar syrup
Into the thickened sugar syrup add butter, lemon juice, salt and vanilla essence
Mix well and take it off the heat
Add the sesame seeds and beat well to mix everything
When this sugar-sesame mixture begins to change colour, add the roasted cashews and put it back on stove
The cashews must be well covered in the sugar syrup
Allow the cashew roast to cool down before storing it in air-tight containers.
