Ingredients
1 cup ragi flour
¼ cup horse gram flour
1 teaspoon fenugreek seeds
½ cup boiled rice
Salt to taste
Water, as needed

Preparation
Begin by soaking ragi flour, horse gram flour, and fenugreek seeds for five hours
After soaking, grind the soaked ragi and horse gram along with the fenugreek seeds, rice, and required salt using a mixer
Leave the batter for at least eight hours to facilitate fermentation
Once the batter has fermented, mix it well and pour it into greased idli molds
Steam the idlis for about 15 minutes until a toothpick inserted comes out clean
Serve the soft, nutrient-rich idlis hot with coconut chutney, tangy sambar, or a drizzle of ghee for added indulgence
