Honey rolls (a Greek dessert)** Honey Rolls are a great tea-time treat. Commonly known as diples, it is a Greek dessert. Diples get their name from the Greek word 'fold'. **Ingredients** 4 eggs (separate it into yolks and whites) 2 tablespoons fresh orange juice or lemon juice 2 teaspoons baking soda 3 and 1/2 cups all purpose flour Oil (preferably vegetable oil) Ground cinnamon for sprinkling Chopped cashewnuts or almonds for garnish **For the syrup** 2 cups honey 1/2 cup water **Preparation** Beat the egg yolks uniformly and add egg whites one by one while whisking the mix Add orange juice or lemon juice into baking soda in a cup and blend it well Add this mix into the egg mixture, and make a soft dough Keep kneading until the dough blisters and forms bubbles when sliced with a knife Cover it with a damp cloth and keep it aside for 20 minutes Take a quarter of the dough at a time and roll them out Cut them into 4 by 6 inch strip Drop strips in hot oil, turn immediately and using two forks roll it up into cylinder Remove from oil when golden brown Drain on paper towels and cool **To make the syrup** Boil honey and water in a pan and simmer it for 10 minutes Skim off the froth Dip the cool rolls into the hot syrup Place it on cake rack and let the rolls to dry For garnish, sprinkle little amount of cinnamon and chopped nuts **3.
