This isn't traditional banana pudding - rather, it's a version made with bananas fried in ghee layered with the vanilla flavoured mixture. Here's a recipe for this Diwali.
2 cups round sliced ripe bananas
Ghee for frying
1/4 cup sugar
1/2 cup water
2 cups boiled milk
1 tsp maida
1/4 tsp cardamom powder
1/2 tsp vanilla essence
Fry the banana in ghee and drain. Keep it in a buttered vessel.
Make a caramel syrup.
Whisk the eggs well. Blend it with the milk, stirring continuously.
Mix maida, cardamom powder, vanilla essence and sugar syrup into egg mixture.
Pour this over the fried bananas.
Steam or bake the pudding.
Turn it over when it becomes cold.
