Prawns peechinga stir-fry is a simple yet delicious dish that combines the succulent taste of prawns with the mild sweetness of ridge gourd (peechinga). This stir-fry is lightly spiced, easy to prepare, and perfect as a side dish with rice. With no extra water needed, the ridge gourd releases its natural moisture, keeping the dish soft and flavorful.

Ingredients
1 tbsp vegetable oil
1/2 cup onions, chopped
2 sprigs curry leaves
1/4 tsp turmeric powder
1 tsp Kashmiri chilli powder
1 cup cleaned prawns
1 1/2 cups peechinga (ridge gourd), cubed
1 tsp salt
Preparation
Heat oil in a pan
Add chopped onions and curry leaves
Sauté until the onions turn soft
Add turmeric powder and Kashmiri chilli powder
Stir well and cook until the raw smell disappears
Add cleaned prawns, cubed ridge gourd, and salt.
Mix well
Cover the pan with a lid and let it cook

Once the water evaporates, remove the lid and sauté for another five minutes
