Balah El Sham - a sinfully delicious pastry from Middle East

Balah El Sham is a popular sweet that is crisp on the outside, but moist and juicy inside. This age-old Middle Eastern pastry speciality is easy to make and sinfully delicious too.

Ingredients
100 gm salted butter
200 gm flour
2 eggs
2 cups sugar
3 lemon slices
Oil for frying
Fried pistachios

Preparation
Melt butter in a cup of hot water
Add the flour to it, mix well and switch off the flame
Transfer this into a bowl, add the eggs and whisk with a hand blender
Wait till it turns into a soft dough
Transfer the dough into a pastry bag fitted with a star-tip nozzle
Gently push the dough (about 5 cm long) into the oil and fry it till all the sides turn golden brown
To make the syrup
Melt two cups of sugar in two cups of water along with the lemon slices
Stir it for 20 minutes over a low flame
Turn off the stove and allow the syrup to cool a bit

Dip the fritters in the sugar syrup as soon as they are fried
Turn them over gently
Take them out and sprinkle pistachios on the top
Serve hot or cold.
