Surprise bread cutlet

Here’s a special cutlet, quite different from the meat-eggs-potato-bread crumbs common variety. Made for very special occasions, this very Kozhikodan snack is also called surprise bread cutlet, for its very element of being sweet when bitten and spicy when eaten. It’s prepared for weddings and other festivities.

Ingredients
1½ onions chopped
1 tsp ginger crushed
1 tsp garlic crushed
2 green chillies (or more, according to taste)
½ tsp chilli powder
½ tsp coriander powder
½ tsp turmeric powder
½ tsp garam masala
Curry leaves as required
1 tsp coriander leaves, chopped finely
1 tsp mint leaves, finely chopped
6 pieces of bread
½ cup maida
Water to knead maida
Salt as required
300 gm boneless chicken
¼ spoon turmeric powder
¼ tsp pepper powder
¼ tsp garam masala
Salt as required
Oil as required
Ghee as required
2 eggs
3-4 tsp sugar

Preparation
Wash and clean the chicken
Cook it with turmeric, pepper and garam masala powders
When ready, drain out excess water and shred the chicken lightly
For the masala
Pour oil in a non-stick pan and saute ginger, green chilli and onion till onion turns light brown
Add chilli, turmeric, coriander and garam masala powders along with a bit of salt
Keep on sauteing till the raw smell leaves the pan
Now add the shredded chicken, curry leaver, coriander and pudina leaves
Mix well and cook
Add sufficient salt and take off the flame
Make a dough with the maida, salt and water, just as it€™s made for chappathis
Roll out three thin chappathis with the dough
Take six slices of bread and fill three slices with the masala
Cover the pieces with the three other slices
Now place the sandwich bread on the rolled out chappathi and fold it into neat squares
Heat oil in a pan and fry them till both the sides are done
Blend the eggs and sugar well
Dip the fried cutlets in the mix
Heat the ghee in a pan and lightly fry the cutlets one by one to make them crisp
When all the sides are done, take them off the pan and serve hot
