Here's an easy after-school snack using potatoes

Potato bajji

At-home-always-moms need to don their thinking caps well before their kids head home from school with a ravenous appetite. What snacks for the evening? Since a well-fed kid is a happy kid, here’s a recipe for moms in a tizzy. It’s one yummilicious bajji.

Ingredients
2 big potatoes
2 medium-sized onions
2 tbsp gram flour (kadala mavu)
1 tbsp garam masala
4 green chillies, chopped finely
Red chilli powder as required
Curry leaves
Salt
Oil for frying

Preparation
Scrape the potatoes, wash and squeeze out the water and set aside
Chop the onions finely, rub in the salt and mix well
Add chopped potatoes, green chillies, curry leaves, red chilli powder, garam masala and gram flour to the onions
Mix well and make balls out of the mix
Avoid excess use of gram flour
Pat into desired shapes
Deep fry till they turn golden brown

Notes
Potatoes can be scraped and put in water to keep them from losing color. Once they are scraped, add the mixes immediately. Too much of gram flour kills the taste of the bajjis. When one side turns almost brown, turn over till both the sides are well fried.
