Chicken Croquettes

Croquettes are made from meat, mashed, flavoured and deep fried to a wonderfully crunchy snack.

2 pieces chicken breast, cut into cubes
½ tbsp ginger-garlic paste
1 tbsp pepper powder
1 tbsp dried red chilli, ground
1 tbsp butter
1 tbsp maida flour
½ cup milk
Salt as required
Oil to deep fry
Pepper powder as required
1 egg
Bread powder as required

Mix the ginger-garlic paste with a little salt, pepper and the ground red chilli and smear on the chicken. Marinate and keep aside for an hour
Heat oil in a pan and sauté chicken in it
Remove from flame once it is cooked. Cool it and grind it to a coarse powder
To prepare the sauce, melt the butter and blend the flour into it. Add milk into this mixture. Once it thickens, add a little salt and pepper powder
Blend the sauce with the powdered chicken
Moisten your palm and roll the batter to make sausage shapes
Now, dip the sausage balls into the beaten egg and then roll over the bread powder evenly
Deep fry until they become golden brown
Serve this with tomato sauce or mint chutney
