A Marathi snack that is a delightful mix of flattened rice, nuts and coconut, this savoury treat is a must-have during Diwali.

Ingredients
1 cup aval/poha (flattened rice)
10 sprigs of curry leaves
½ cup cashew nuts
2 tbsp raisins
Oil as required
½ cup split Bengal gram roasted
½ cup peanuts roasted
¼ cup coconut bits roasted
¼ tsp mustard seeds
½ tsp cumin seeds
1 tsp white sesame seeds
½ tsp chilli powder
½ tsp turmeric powder
1 pinch asafoetida
1 tsp sugar
Salt, as required

Preparation
Measure the aval and keep aside. You could take more quantity if required
Wash the curry leaves and dry fruits separately and keep it drained of water
Take a pan and heat some oil. Put some aval into a steel strainer with a long handle and hold it over the hot oil. The aval will puff up and get fried. Repeat the process taking a little aval at a time
Drain the excess oil using a paper napkin
Next, fry the Bengal gram, ground nuts, cashew nuts, raisins, coconut bits and curry leaves separately and drain off the excess oil
Heat a little oil in a pan, splutter some mustard seeds and then to this add cumin seeds and sesame seeds
Once they splutter, switch off the flame and remove from fire
To this oil mix, add the chilli powder, turmeric powder, sugar and salt and then place pan on fire again To this, add all the fried ingredients one by one
Add the curry leaves in the end. Mix well and serve
